Atomic hot dog II!

Some time ago, I did a post on what I called an 'Atomic Hot Dog'. It was basically a plain Jane affair that I bombed with some diced Habanero peppers. As these peppers are one of the hottest known to humankind, all I did was to blister my mouth rather severely! That was definitely not what I was looking for!

This time around, I opted to mellow out the heat, just a tad, by forgoing the Habanero route in favor of something of a milder persuasion. So, for this test, I decided first on visiting my local grocery market to see what they had to offer. As it was just 22 degrees outside, I bundled up pretty well before venturing out. You see, I'd discovered years ago that I got slower, depending on how low the temperature got. (After doing a bit of math, I determined that somewhere around 4 degrees above zero, I would likely lock up all together)! On this particular day in January, although I shuffled around like an old man returning soup to a kitchen, I made the trip OK.

At the store, I discovered a jar of deli sliced hot cherry peppers that looked like they might be rather tasty while not being too hot. While I was there, I also picked up a package of Ball Park buns. The frankfurters were already in my fridge – Oscar Meyer Jumbo franks! Those, along with some condiments and relish and I was all set! Allez cuisine!

One would think that slinging together a hot dog would be a breeze, and you'd be right if you weren't me! I like to make the simple, complex and the complex impossible! So, saying, I spent a good hour figuring out;

Handling those buns – No one I know particularly likes eating a cold bun. Buns are supposed to be warm, brown and something you can really sink your teeth in! To that end, I like to give my buns a quick do over in a convection oven.

The condiments – In order to insure the maximum taste impact, I typically throw a teaspoon of sliced onions into a food processor with a like amount of hot peppers. The resulting mush insures that whatever heat therein that exists while hot my mouth all at once. To this mix at the last minute, I'll typically add a small amount of pickle relish, mustard and ketchup.

Getting you wiener hot – OK, everything was in readiness with the exception of that wiener. Should it be pan fried, microwaved or boiled in water? Heavy questions those. Personally, I generally opt to heat mine in some boiling water for about five minutes before slipping it quickly into a hot bun that's been lubed up with the aforementioned condiments....wait...what?

Well, this 'creation' proved to be way too time consuming even as it was very tasty! Thanks goodness it only cost about a buck and came in at ~275 calories! And finally, on a nutritional note, frankfurters are a real diet no-no. They contain corn syrup, salt and high levels of saturated fats! So, consume sparingly!

Critique: Red Baron's Deep Dish Single Pizza!


It had been some time since I'd had any pizza and so it was that I bought a Red Baron Deep Dish pizza package at my local grocery store on a whim. There were two small pizza's in a box that cost me $3.34. when I opened the box up, after I got home, I was surprised to see how small they were. Almost immediately I was then shocked by the nutritional information! Each little pizza 'bomb' that weighed a mere 159 grams or a third of a pound or about 5 ounces contained 430 calories, 20 grams of fat, 40 mg of cholesterol and 990 mg of salt! In other words about as bad a piece of nutrition as there is anywhere to be found! And, while I may be somewhat suicidal, I wasn't crazy!

To that end, I made the quick decision to only try ½ of a serving. By doing that I cut the whole nutritional mess down to a livable portion. I then substituted in a small salad and called it a day.

The taste of my little portion was as feared. Incredible! My only complaint was that I felt that the crust was a bit too crunchy. But, why is it that the poorer a food is, the better it seems to taste overall? Mine was gobbled up so fast, I almost bit off my fingers! I then finished this lunch off with the salad that served as a rather boring counterpoint the the entire interlude.

The infamous DanO Burger revisited!


Making a great tasting hamburger is both a science and an art! The quintessential ingredients are just two; a good hamburger bun and awesome ground beef. But, it is the add-ons and the condiments that can make or break the entire eating experience! That in mind, let's break down this bad boy...

Buns
Buying a cheap bun will put the kabash on the whole burger deal early on. The ideal soft burger bun should be pillowy, squishy, and tender, with a tight but soft crumb and a distinct sweetness. It should hold up nicely to the burger's juices, but also should never be tough or cottony in texture. On the opposite end of the spectrum, you don't want a burger that disintegrates half way through your meal. I personally prefer the offerings from folks like Pepperidge Farm! I had to settle for Ball Park buns which are all I could find at the Country Mart store where I live.. (Good enough for the masses, but I can guarantee these are never found in Hilliary's pantry). Add a bit of butter and quickly grill on a hot plate just before serving!

Ground Beef

For heavens sake, don't buy low fat burger meats – a good juicy hamburger uses a beef blend of at least an 80/20 lean to fat ratio. In my case, I like to order the best meat I can afford. I personally like the Angus burgers offered at Schwan's. They are fully cooked, fire-grilled burgers with select seasonings and a fresh grilled taste that you can nuke in the microwave! Awesome.

Add-ons

OK, here is an area where I sometimes like to go a little wild especially after drinking beer! – But, a true DanO burger keeps it simple and stupid. I only add a generous slice of white or red onion, romaine lettuce, thinly sliced dill pickles for added crunch and a fresh tomato! (Note that I said fresh, not hothouse). While I like cheese, I don't use it on this creation.

Condiments

The real coup d'etat for any hamburger creation centers around what types of condiments you decide to slather on your bun just before eating. In my case, that would be four; ketchup, mayo, mustard and just a bit of horseradish. This combination provides a mouthwatering mix that is tangy with just the hint of a bite. 

Nutrition and cost

A DanO Burger comes in at about 500 plus calories, so it's a meal unto itself.  In this prep, I was forced to do with out the tomato and used pickle relish instead of the sliced dills I really prefer. Still in a war, you dive for the nearest foxhole...

Hamburgers and fries at the Frosted Mug!

Even though I've recently changed my diet in a rather drastic way by adopting the Paleo Diet which severely restricts such foods as processed meat, pastas dairy, breads and all pastries – I've still allowed myself two 'open meals' per week where I can stray. This week, my very first open meal was on a Monday and I chose to enjoy a hamburger and fries at a local eatery known as The Frosted Mug. At a cost of only $6.95, this meal really had only one 'bad' thing going for it – those oh so tasty French fries!

As a food that made it to #3 on the list of 'Five worst foods you can eat', the ubiquitous French fry is not one of the best of foods to eat all the time! It's a fried food and it can add on the pounds in no time! (A much smarter meal would be a hamburger and a small salad for about the same or less money)! Maybe I'll order that next time... then again, maybe not!

The hamburger, which was cooked by Chef Tim Evans, was top notch! And, to my credit and surprise, I only ate half that order of fries! Note: I also made sure to take a couple of capsules of Fish oil which is a rich source of Omega-3 fatty acids, and as such, helps to balance out the not so good for you Omega-6 acids that come with eating the meal. If you eat a lot of junk food I would highly recommend that you take this supplement! Side note: There is some new evidence that you can overdo supplements, especially Vitamins C,B6, E and A, so be careful.

After staying away from the Mug for a prolonged period of time, I've made I a point to once again frequent this long-lived eating establishment, especially in light of the recent improvements to the cooking and the bar-tending staff. Professionals like Heather help made the experience very enjoyable! If you live in the Forsyth, Mo area, I'd urge you to give them a try!
